The Whole Beast: Nose to tail eating by Fergus Henderson

An excellent cookbook recommended by our friends and customers, Hien Le and Randy.  This book is for those who want to get the most out of their farm-raised animal.  Recipes for cooking animal organs, pigs head, feet, tail, tongue, blood, etc.  Not for everyone, but for those who like to experiment.  We have prepared many of the recipes in this book and I have enjoyed them.  My wife on the other hand....

 

Steaks, Chops, Roasts and Ribs from the editors of Cook's Illustrated magazine.

Another great cookbook that shows the types of cuts coming from beef, pork and lamb.  It also rates them based on cooking tests for tenderness.  There are numerous recipes and details on methods of cooking meat.  We have found it a very useful cookbook and meat cut information source.  Click on the book to the left will take you to a link on Amazon.com
